There are two things I can meal prep and never get sick of them: asian dishes & mexican. So when a friend of mine showed me this recipe for healthier chicken lettuce wraps, I had to put my own twist on it. No soy sauce. No grains. Just pure, whole food, yumminess. Best part is it's super easy and can be prepped and finished in under an hour.


  • 3 T liquid aminos
  • 3 T teriyaki coconut aminos
  • 2 cloves garlic, minced
  • 2 T water
  • 1 T ginger, minced/ground
  • 1 T rice vinegar
  • 1 T sriracha
  • Juice of 2 limes
  • 1 t arrowroot (can sub cornstarch)


  • 1 lb chicken breast, ground or cubed
  • 1 T sesame oil
  • 1/4 C cashews, chopped
  • 1/3 C green onion
  • 1/3 C carrots, shredded
  • 1/3 C white onion
  • 12 oz package cauliflower rice (can use regular rice if not grain free)
  • Bibb lettuce for wraps

  1. Prepare sauce. Place all ingredients in a small bowl & whisk. Set aside.
  2. Heat sesame oil in large skillet over medium heat. Add chicken and cook until lightly brown.
  3. Add sauce, cashews, green onion, carrots, and white onion. Allow to thicken for a couple minutes.
  4. Stir in package of cauliflower rice.
  5. Serve in lettuce wraps or as desired.

I know what it's like. You walk into the grocery store, start checking things off your list, and then before you know it you've spent an hour in the "bar" aisle reading every label and ingredient and wondering what to get.

Trust me when I tell you I've been there. I've tried just about every bar available at Whole Foods, Fresh Thyme, Kroger, Target... You name it, I've probably purchased it. I used to be obsessed with finding the bar with the most protein. I didn't pay much attention to the other 20+ junk ingredients, added sugars, and preservatives. Recently, however, I've been more focused on finding snacks with REAL ingredients and no artificial sweeteners. So here I have for you a list & review of my top 7 snack bars without all the ingredients nobody knows how to pronounce. Enjoy!

Square Organics

Specs: organic, non-GMO, gluten-free, dairy-free, soy-free, vegan

What I love about them: Actually tastes like a candy bar. No seriously the chocolate coconut one tastes like a Mound bar.

Cons: All of them are chocolate coated so if chocolate isn't your thing, they're probably not for you.

My favorite flavor: Nuts & Sea Salt 10F / 20C / 10P

Rise Bar

Specs: non-GMO, soy-free, gluten-free, grain free

What I love about them: All of the bars have a simple ingredient list, made with no more than 5 ingredients per bar.

Cons: Not organic (although they do have "energy bars" that are organic). Not all are vegan-friendly.

My favorite flavor: Almond Honey (made with just almonds, honey & whey protein!) 16F / 20C / 20P


Specs: organic, non-GMO, soy-free, gluten-free, vegan

What I love about them: I'm a sucker for a company with a great story & an even bigger sucker for a company that gives back to the community. Check out their website to read about them! Not to mention these bars keep me full for a long time if I'm on-the-go or having a super busy day at work.

Cons: Not a huge fan of the first ingredient being brown rice sugar. They're also a little high on the carb side of things.

My favorite flavor: Everlasting Joy (coconut + almond butter + chocolate chips) 11F / 37C / 10P


Specs: non-GMO, soy-free, dairy-free, gluten-free, vegan

What I love about them: SO MANY FLAVORS. Such simple ingredients. And another company that gives back constantly (checkout their partnership with Feeding America)

Cons: Most are not a significant source a protein and sugars (while all natural) can be high

My favorite flavor: Chocolate Coconut Chew 13F / 29C / 5P

Purely Elizabeth Granola Bar

Specs: organic, non-GMO, gluten-free, vegan

What I love about them: Each bar contains 2g of adaptogenic, superfood mushroom blends that help to improve various aspects of health such as immunity, stress relief and cognitive support (amazeballs). Click here to read all about this!

Cons: Not a significant source of protein and unfortunately not available to the public yet! The functional benefits of these bars make them a top 7 for me! Plus, if you've ever had Purely Elizabeth granola, you'll understand how yummy these are.

My favorite flavor: SHINE (strawberry dark chocolate + almond butter) 3.5F / 21C / 2P


Specs: gluten-free, dairy-free, soy-free

What I love about them: No B.S. - really, it says so right on the wrapper. But in all honesty I love that the ingredients are spelled out for you without even having to read the nutrition facts. And the egg whites provide 12g of protein in each bar. They also have three new flavors out!

Cons: Not vegan friendly due to the egg whites. A lot of people complain about the chewy texture (I happen to like it)

My favorite flavor: Maple Sea Salt (seriously so freaking good) 10F / 22C / 12P

Perfect Bar

Specs: organic, non-GMO, gluten-free, soy-free

What I love about them: If you follow me on instagram, you know I need a Perfect Bar Addict Support Group. I don't know how to describe it, but they literally melt in your mouth. They're full of healthy fats and 20 different superfoods! Moral of the story: I'm obsessed. They also just released two new flavors that are rolling out in stores now!

Cons: Super high fat content - but it's all healthy fats and they keep you full for a while! They also have to be kept refrigerated which can be inconvenient if you're on-the-go or traveling.

My favorite flavor: Fruit & Nut (but I haven't tried their new PB chocolate chip one so I'm pretty sure that would take the cake) 18F / 27C / 16P
